They're all worthy, but I'd start at the beginning - At Action Park. Buy the vinyl (is that too obvious to say? presumably it's still in print) because the drawing of Action Park inside is amazing but too small on a CD sleeve.

Thanks Rob! The album is available at iTunes plus there's a digital booklet to probably enchance the experience of having a vinyl sleeve in your computer.

Weird this, I've been listening to Shellac recently. I'd agree with Rob, too. Go in chronological order, but all the albums are pretty smart. I wouldn't mind a singles compilation at some point, as there are plenty of great non-LP tunes. I'd also recommend the Rapeman stuff, which is just as good as Shellac.
